One of the biggest perks of the undermounted sink is the nonexistent rim.  The outer rim on a conventional sink is a breeding ground for dirt and bacteria.  Since there is no rim, food can be wiped straight into the sink, without getting caught under the rim.  Another issue with the conventional sink rim is that water can become trapped under it, warping the countertop.  The overall aesthetic appeal is that this look is sleek and modern, but can work in all types of kitchen decors.  And since there is no rim, you will have more counter space for your appliances and work space.
